Twin Cities Wedding Cake and Mini Cupcakes: Stef and Andrew

Cocoa & Fig was happy to be part of this bright and gorgeous, late summer wedding of Stef and Andrew. Stef did most of the planning and details along with Melissa from Sadie’s Couture Floral and Event Design (who also did the floral arrangements.) All of these lovely photos were shot by Whitney for Laura Ivanova Photography.

We created created a 3 tier cake with fondant icing and fondant teardrop petals, Vanilla Bean mini cupcakes with Caramel Buttercream, Chocolate mini cupcakes with Coffee Buttercream, and Black Velvet mini cupcakes with Vanilla Bean Buttercream.

St. Paul Wedding Cake and Mini Dessert Table: Heather and John

With the assistance of local event planner Laura Mullen Event Design, Heather and John's wedding was an elegant affair in St. Paul. The reception at James J Hill Library was a gorgeous setting with pillars and colorful books in the backdrop, and photographer Laura Ivanova took some stunning shots of the occasion.

The Cocoa & Fig dessert table featured a 2 tier cake with fondant icing and buttercream polka dots along with a variety of miniature desserts including Pumpkin, Black Velvet, Sinfully Chocolate, and Vanilla Salted Caramel Mini Cupcakes, Brown Butter Rice Krispie Treats, Fresh Fruit Tartlets, Dark Chocolate and Tiramisu Dessert Shooters, and Raspberry Swirl Mini Cheesecakes.

As I look back fondly on 2011, there are so many delightful baking memories, dessert creations, and flavors that stand out in my mind. Our customers have provided kind compliments and great feedback on some of these creations so we thank you for those and always take them into consideration when coming up with the next C&F treat. So without further ado, we introduce the official list of the most popular Cocoa & Fig desserts of 2011. And don't worry, these aren't going anywhere in 2012! Were these your favorites too?

5. Berries & Cream Cake

Who doesn't love the classic combination of fresh berries and whipped cream? No one! That's why this cake is the most chosen for celebrations and small gatherings. We make our fresh Vanilla Bean Cake with Madagascar vanilla beans and layer it with fresh whipped cream and fresh sliced strawberries, then ice the whole thing with our vanilla bean buttercream. It's heavenly!

4. Sinfully Chocolate Cupcake

For the true chocolate lovers out there, our Sinfully Chocolate cupcake has been a dream come true. We make our moist and delicious Valrhona Chocolate Cake, then fill it with creamy ganache and top it with chocolate buttercream. And if that wasn't enough - we dip the top in ganache. This indulgent cupcake is perfect for a much-needed (and well deserved!) chocolate fix.

3. Southern Banana Pudding Layered Dessert Shooter

This dessert is so good that it was featured on the Cooking Channel’s Food(ography) show back in September. The episode, Sugar, showcased our Southern Banana Pudding Dessert Shooters which are made by layering rich vanilla bean custard, fresh bananas, crushed Nilla Wafer cookies, and fresh whipped cream. The shooter cups with tiny spoons are an adorable addition to any dessert table.

2. Black Velvet Cake Lollipop

The Cake Lollipop is a customer favorite – not only with kids, but among adults too. Our decadent cake and buttercream icing is combined and rolled into a ball then dipped in milk, dark, or white chocolate. The Black Velvet Cake Lollipop has been the best selling flavor at our retail shop, for special event orders, and for wedding dessert tables.

1. Salted Caramel French Macaron

The festive Parisian sandwich cookie – the French Macaron - has really grown in popularity this year, and the Salted Caramel flavor is definitely number 1. Two caramel meringue cookies are sandwiched with caramel buttercream icing with a touch of fleur de sel and rich caramel in the center. It has everything you'd love in a great dessert - sweet caramel, creamy buttercream, chewy cookie, and a hint of salt.

Stately, elegant, and festive - the perfect description for the miniature dessert table we did for a holiday wedding reception held at Calhoun Beach Club. Coordinated by Dawn Ewest of Dawn Michelle Designs, the space was decorated with Christmas trees, garland, candles, floral arrangements, and more which made for a stunning setting. Shelly Mosman Photography captured all of the details of the spread in the photos below.

We're honored to be featured in Southwest Newspapers today! Reporter Leah Shaffer visited the Cocoa & Fig Shakopee production kitchen to interview Laurie and Joe, and check out all of the new holiday items baking in the kitchen. The article titled Cocoa & Fig offers seasonal goodies, with a twist was printed in the Let's Go section of all Southwest Newspapers including the Eden Prairie News, Savage Pacer, Chaska Herald, and more. Here's a short excerpt:

If you’re the type who’s ever yawned at the usual offering of sugar cookies and gingerbread, Cocoa & Fig’s holiday treats might be the menu to check out.

The bakery specializes in “just making things a little bit more gourmet than maybe grandma made them but still have some flavors that are reminiscent of what you had when you were a kid,” Pyle said.

For example, salted caramel is the popular treat this season.

“We are doing our salted caramel nut tarts which is sort of a kicked up version of a pecan pie,” Pyle said. Cocoa & Fig’s head pastry chef is allergic to pecans. “So maybe selfishly, I wanted something that didn’t have pecans,” she added.

Another classic with a twist: chewy, chocolate ginger cookies.

Cocoa & Fig’s recipe adds Valrhona cocoa powder and 70 percent chocolate chunks with crystallized ginger. Definitely not your grandma’s gingerbread man.

Gorgeous Dessert Table for Rachel and Justin's Wedding

Rachel and Justin had an elegantly gorgeous wedding with reception to follow at Oak Ridge Country Club. The amazingly talented team over at Amy Zaroff Event + Design worked wonders with the white, slate gray and pale purple color scheme - the wedding just radiated with French elegance. And the luscious florals by Sadie's Couture Floral are breathtaking. I especially love the giant baby's breath arrangements.

We designed a Custom Miniature Dessert Table for the reception and flavors included: Vanilla Cake Lollipops and Chocolate Cake Lollipops, Mini Crème Brulee with Caramelized Sugar, Mini Streusel Topped Fruit Pies, Lavender and Salted Caramel French Macarons, Valrhona Chocolate Bouchons, Black Velvet Mini Cupcakes with Lavender Cream Cheese Icing & Mini Eclairs!

Custom Film Reel Cake

Cocoa & Fig was asked to design a custom cake that looked like a classic film reel - we think it turned out pretty awesome! The "film" was done in black fondant with white square pieces, and the "reel" was done in red fondant. It was finished off with an inscription on top that mimicked the old, glitzy signs with movie titles or stars' names in lights. So classic and fun!

With a fun color scheme of navy blue, green, and orange, we knew that Dennis and Sarah's wedding at Five Event Center was going to be a festive celebration. And with photographer Cadence Cornileus behind the camera, all of the beautiful details and sweet moments were sure to be captured.

The dessert table featured a two tier cake with the queen Anne's lace design from their invitation along with a great assortment of mini desserts including Dark Chocolate and Southern Banana Pudding Dessert Shooters, Peanut Butter Cake Lollipops, Oatmeal Peanut Butter Cookies, Lemon Raspberry Mini Cupcakes, and Fresh Fruit Tartlets. Each leaf is hand-cut fondant placed on fondant iced tiers, and the base is trimmed in a sage green ribbon. Autumn in Minnesota is the perfect backdrop for an outdoor wedding with the natural color scheme of warm, golden brown tones and hints of red and yellow. This was the inspiration behind a photo shoot we did with some outstanding Twin Cities wedding vendors to create the beautiful setting of a vintage wedding in the woods (woods being the popular Woods Chapel in Orono, MN).

Cocoa & Fig desserts included Apple Galette, a 3-layer exposed Pumpkin Cake, Carrot Cake Cookie Sandwiches, Blueberry Pie, Vanilla Cheesecake with Cranberry Compote, and Chocolate Chunk Cookies.

Gourmet S'mores Bar by Cocoa & Fig

We had the chance to debut our Gourmet S'mores Bar at the Independent Wedding Association's Groom's Night event - and what a success! Check out their blog for a recap along with highlights and photos of all the participants.

Attendees enjoyed the interactive s'mores dessert option with house-made graham crackers, three different types of Ghiradelli chocolate to choose from, and locally produced marshmallows in raspberry, chocolate, and vanilla bean. If the only marshmallows you've ever had were the ones that come in a bag, wait until you indulge in a made-from-scratch variety! And we guarantee that when you try our graham crackers, you'll never go back to the blue box again.

We also made ribbon-tied S'mores guest favors so guests could re-create the fun at home. What a perfect sweet treat to leave your guests with at the end of a fun-filled celebration. They'll thank you for weeks to come!

Our desserts are turning pink for three days this month to help find a cure for breast cancer!

Wedding Inspiration Shoot: Library Love

There is something elegantly chic about antique furniture, vintage jewelry, colorfully covered books, old typewriters, and horn-rimmed glasses. These things were the inspiration behind our most recent photo shoot - Library Love. Some magnificent Twin Cities wedding vendors came together to create this uber-cute wedding setting including photographer Jeff Loves Jessica, stationer Paperista, Spruce flower boutique, and Lime Canary vintage rentals. We couldn't have asked for a nicer team to work with on this one.

Cocoa & Fig designed two cakes - one with a more masculine style of clean lines and chevron stripes and the other in a frilly, feminine style reflecting the ruffles in the bridal gown. We also made custom tinted French macarons in green, banana pudding layered desserts shooters, lemon meringue tartlets, cake lollipops in cute pale green cups, and toasted coconut cupcakes tied with a little blue ribbon.

Mini Dessert Table and 3 Tier Cake for Nicole and Ryan's Wedding

I adored the lovely, vintage-chic setting of Nicole and Ryan's wedding at Nicollet Island Pavillion this summer. There were subtle accents of pink, yellow, and blue-grey, especially in the beautiful succulents, roses, billy balls, and hydrangeas. And all of the details were captured in these stunning photos by Gene Pease of Geneoh Photography.

The dessert table we designed included a 3 tier buttercream cake with a rustic styled exterior topped with fresh florals from Studio Fleurette. Mini desserts the couple chose were Black Velvet and Lemon Raspberry Mini Cupcakes, Pistachio French Macarons, Banana Pudding Dessert Shooters, and Vanilla Cake Lollipops.

Earlier this week, we made our television debut showcasing our modern twist on a classic dessert: Southern Banana Pudding Dessert Shooters. The show - Food(ography) with Mo Rocca - featured iconic sweet treats from around the country and aired on the Cooking Channel. It was such an honor to be invited to be on the show, and such a whirlwind of taping in our kitchen that happened within a matter of days back in May. Our segment was short but sweet, and we're so happy to have been given the opportunity to share our dessert shooter creation with the world.

So what's the story behind our Southern Banana Pudding Dessert Shooters?

The idea for our decadently creamy Southern Banana Pudding Dessert Shooters was inspired by my love of everything banana. My grandmother made the most amazing banana bread when I was growing up and I couldn’t get enough – often eating half the loaf myself! I also spent a short time in Durham, North Carolina and one of my favorite restaurants was Cooks Corner. They serve the most amazing Southern Banana Pudding I have ever tried! It’s a rather large serving that comes in a bowl and it’s topped with fluffy, toasted meringue. Just thinking about it makes me hungry! We’ve scaled down this version into a mini size that’s perfect for a post-dinner treat.

The shooters are made by layering vanilla bean custard, fresh bananas, crushed Nilla Wafer cookies, and fresh whipped cream. Many clients say it tastes like banana cream pie in a glass!

Minneapolis Wedding Cake and Custom Dessert Table: Adriana & Rick

Adriana and Rick came to Cocoa & Fig with some wonderful ideas for the dessert at their reception. We settled on a centerpiece cake topped with sugared fruits - a spin-off of a cake Adriana had seen at a wedding she attended in Italy. We also included a buffet of cakes, two of them topped with flag bunting representing each of their cultural heritage - flags of the U.S.A and Argentina. We also included an assortment of miniature desserts and cheesecakes including Tiramisu and Dark Chocolate Dessert Shooters, Salted Caramel Macarons, Key Lime, Raspberry, and Turtle Cheesecakes.

Laura Mullen was the fabulous planner behind this wedding and reception. The modern setting of the Guthrie, especially the red and black backdrop to the dessert table, created a rich and warm elegance in the room. We loved the artistic simplicity of the red carnations done by Munster Rose - they made such a striking statement in the room. And the photos by La Vie - absolutely gorgeous!

Miniature Dessert Table for Amy and Andrew's Wedding

Amy and Andrew had a beautiful wedding with pink accents everywhere - the bridesmaids' dresses, the flowers, the dessert table linen, the escort cards, even the bride's shoes and groom's socks! Cocoa & Fig was honored to do the dessert table spread (with more pink accents) including Peanut Butter Cup Mini Cupcakes & Black Velvet Mini Cupcakes both garnished with pink hearts, Lemon Raspberry Mini Cupcakes with pink swirls, Fresh Fruit Tartlets with raspberries, and Almond Caramel Cake Lollipops Striped with pink icing.

The celebration was held at the Lafayette Club on a gorgeous Friday evening in August, and La Vie Photography captured some stunning photos throughout wedding. Enjoy!

Christina and Pat's gorgeous 5 tier wedding cake was a great centerpiece for the elegant setting at the Graves 601 hotel. The cake featured a large sugar flower on the top tier and a broach style flower on the fourth tier with alternating ruffled and ribbon detailing at the base of each tier. I loved how it went with the simplicity of each table centerpiece which was a tall vase with a single white orchid stem. Congratulations Christina and Pat!

Our summer has been delightfully busy, but we took a break for an amazing inspiration photo shoot with some of Minnesota's top wedding vendors. The shoot took place in a restored school house on a farm in Osakis, Minnesota with the theme, "In this place called Heavenly." And heavenly it was with a rustic yet elegant setting and sweet hints of lavender, pink, red, and blue. Desserts of ours included Rhubarb Galettes, Berries and Cream Shooters, and Lemon Meringue Tarts, along with three charming buttercream cakes each with unique icing styles.

Brandon Werth did a beautiful job on the photography, and we couldn't have asked for a better collaboration with MN's finest vendors!

Sara and Moody's Wedding Cake of Travels Together

Sara and Moody are a fun, adventurous couple that love to travel! They were very hands-on in the design of their 3 tier wedding cake - they wanted it to be a representation of all their favorite travel destinations. The result - an elaborate and fun cake with destinations including Egypt, Miami Beach, Monaco, Monte Carlo, and Minneapolis. We also included 3D elements like a sculpted red vespa scooter, a little pair of flip flops, and poker chips all made out of fondant. And we got a kick out of the wedding topper that the couple found with a soccer playing groom and his fan bride. What a unique wedding cake for this amazing couple!

There were also a variety of miniature desserts to surround the cake which included Key Lime and Tiramisu Dessert Shooters, Chocolate and Vanilla Cake Lollipops, Black Velvet Mini Cupcakes, and Chocolate Covered Strawberries.

The modern and stylish reception at the Edina Westin looked like a fabulous setting for a celebration - I'm sure all of the guests had a blast!

Laura and Dan are probably one of the nicest couples I've had the pleasure of meeting. Not being huge cake people, they wanted something different for dessert at the reception. They fell in love with our miniature desserts - especially the little dessert shooters. We designed a table that fit beautifully with the rustic chic style of the wedding. Thanks to Jenny Sewell of Sewell Photography for providing these amazing images. I loved the pop of teal used throughout the ceremony & reception. And how cool is the trolley that the wedding party rode from the church to the reception and around St. Paul for photos!

We were recently asked to participate in a very fun photo shoot with a super girly Paris theme. And who says no to that? Paperista's Etiquette Class for Brides proved to be perfectly sophisticated and very educational. I not only got to provide the yummy desserts but also got to attend.

Semple Mansion looked beautiful as always and had several wedding vendors add to the "classroom" decor. The etiquette expert, Angelyn Davis, was incredibly polished and a great instructor. I learned everything from proper table manners to a more refined way to word invitations, thank you cards, and even address envelopes.

Hello Spring, We're Back!

Hello our dedicated readers! Wait; are any of you still here? So sorry for the long absence, I never intended to take such a hiatus from writing on here. As most of you know, we opened our first retail location last February and there was a lot of work to be done to get up and running. And then there were the products to bake, the deliveries to make, the invoicing and bill paying to do, the list goes on and on. We were so busy with filling orders that our online presence needed to take a break. Or perhaps that was me that needed the break!

In any event, we’re back on track now and our new goal is to write at least twice a week. But don’t worry if we miss a day, more than likely we’re in the kitchen icing cupcakes or decorating a wedding cake and are covered from head to toe in buttercream. Computers and buttercream don’t mix by the way, but that’s another story!

You may have noticed the new blog design. We wanted the look of the website and blog to be more cohesive and we think Keely from Luxe & Lillies did a great job.

In addition to a collection of amazing vendors, there will also be a series of wedding mini-courses to help with your planning. This is a different kind of wedding fair, so don't be afraid to ask questions and spend some time talking to the vendors to really get to know them. Most of these businesses have single owners with just a few employees, so chances are you'll see this person on your wedding day. Elspeth and Adam's Elegant Ivory Lace Cake

Elspeth and Adam had a stunning winter wedding that was warm, romantic, and elegant. Their dessert table featured a variety of miniature desserts including Chocolate & Vanilla Cake Lollipops, Carrot Cake Baby Cakes, Vanilla & Caramel French Macarons, and Fresh Fruit Tartlets. A gorgeous 2 tier cake with a deep purple sugar flower, ivory lace, and gold details served as the centerpiece. For an extra touch of elegance to the dessert table, the dessert flavor signs were designed using elements from the invitations.

Ocean Themed Dessert Table

The celebration for Max's bar mitzvah was a fun-filled, underwater extravaganza at the Mall of America complete with a custom dessert table from Cocoa & Fig. This elaborate table design included an ice sculpture, brightly colored rock candy that mimicked coral reef, molded fondant seashells, crabs, starfish, and seahorses, and aqua blue linens.

The dessert spread featured mini cupcakes decorated with ocean animals, cake lollipops, custom cakes, fresh fruit tartlets, lemon meringue tartlets, mini chocolate chip cookies, key lime dessert shooters, and a variety of candy.

Everyone was blown away by the spectacular setting - Twin Town Events did an awesome job planning the party and the cool photos were taken by Mad Chicken Studio.

Whirly Pop Cake for Danielle's Bat Mitzvah

Abby & Santiago's Macaron Cake

The wedding of Abby and Santiago was a very royal and elegant black tie affair. Just to give you a sense of this couple's style, instead of bringing along past issues of Bride Magazine or The Knot, Abby showed up to her meeting with copies of Grace Ormande - the uber luxurious magazine that exudes exquisite style.

Both the ceremony and reception took place in the fabulous International Market Square which was decorated with hanging paper lanterns and touches of gray, pink, and ivory.

Cocoa & Fig created a 3 tier square stacked cake that was covered with ivory fondant and decorated with pink raspberry macarons.

The couple also wanted a variety of miniature desserts on each table for guests to nibble on so they chose Fresh Fruit Tartlets, Chocolate Bouchons, Banana Pudding Shooters, Tiramisu Shooters, and Cake Lollipops. Guest favors were also done by Cocoa & Fig - one salted caramel and one chocolate French macaron were placed in our signature favor box and wrapped with a gray ribbon.

Modern Dessert Table for a Wedding at the Walker Art Center

The dessert table for Dara and Barry's wedding reflected the clean and modern style of the Walker Art Center, and had a chic, 3-tier wedding cake as the centerpiece. The cake was decorated with cascading round disks in shades of gray and purple which went perfectly with the Valrhona chocolate bouchons and purple tinted French macarons. We love making cakes for kids! When this repeat client contacted us for another birthday cake she had one request: no more hockey cakes. Her sons are in love with hockey and only request hockey related cakes. But after 3 or 4, it was time to try something new. And what could be more fun than a kid's cake with MONSTERS? Based on a t-shirt design on Etsy, these monsters are more silly than scary.

They remind me of the characters on Fraggle Rock.

The Irish Car Bomb proved to be the most polarizing cupcake of the bunch — the liqueur-infused frosting was too much for many, while others said it had a “lovely flavor,” was “surprisingly better than I thought it would be,” and was a “fave — love the alcohol!”

I think we learned something important: Our customers would like less icing on their cupcakes. We hear you loud & clear and we're making that change today!

Cocoa & Fig comes to Gaviidae Commons

Cocoa & Fig, the Shakopee-based catering and special events company famous for its high-design cupcakes, cookies and French macarons, opened a retail location last weekend in Gaviidae Commons. The quaint little patisserie — only 230 square feet — squeezes in next to Juut on the second-story skyway level of the Saks Wing of the Commons. Hours are Monday through Friday, 8 a.m.–6 p.m., and Saturdays 10 a.m.–5 p.m.

The retail space — Cocoa & Fig’s first ever — will operate as a specialty bakery, with emphasis on high-end baked goods and coffee in the morning, said owner Laurie Pyle. Pyle hinted at a partnership with Bull Run Coffee Roasting Company, the connoisseur brewers known for taking an exquisitely refined approach to the cup of Joe.

In the afternoons, the store will operate mostly as a dessert boutique, Pyle said, although she would like to introduce a line of specialty, locally sourced sandwiches and soups. Such lunch items may be available in a month, she said.

A grand opening is tentatively planned for March.
